Lacy Oatmeal Cookie Day

It’s Lacy Oatmeal Cookie Day! Oatmeal cookies have been around since the late 1800s. Unlike classic oatmeal cookies, Lacy Oatmeal cookies are thin and crispy! They also do not contain whole grain oats.

Oatmeal cookies originated in England, and evolved from the savory oatcake. In the Middle Ages, soldiers carried oatcakes with them in case they needed a quick boost of energy during battle. Although our modern-day version is much sweeter, oatcakes and oatmeal cookies share many of the same ingredients including spices, nuts, and raisins.
