Spring Salad – A spring salad is a great crisp and refreshing spring treat. Combine colorful and crunchy lettuce such as romaine, iceberg, cabbage, arugula, spinach and radicchio. Add colorful fruits and vegetables, such as apples, pears, strawberries or avocados. Top the salad with a sprinkle of feta cheese. Offer light salad dressings on the side such as raspberry vinaigrette, balsamic vinaigrette and poppy seed.
Fruit Cups – Fruit cups make delicious and nutritious spring party desserts. Begin with large navel oranges. You will need one navel orange for every two guests attending the party. Cut each orange in half, and use a melon scooper to remove the pulp from the orange rind. After scooping out the pulp, you will have the orange rinds to use as the cups to hold the fruit. Place fruits such as raspberries, blackberries, strawberries and pieces of orange in the fruit cup. Include a mint leaf in the fruit cup for an added accent. Squirt a dollop of whipped cream on top of the fruit. Enjoy!
Lemon Bars – Tart, yet sweet lemon bars make delicious spring party desserts. Gather your ingredients, which include butter, white sugar, flour, eggs and lemons. Begin by preheating your oven to 350 degrees F. Mix together one cup of softened butter, ½ cup of sugar and two cups of flour. Once blended, press the mixture into the bottom of a pan that is 13x9 (ungreased). Bake the crust for 15-20 minutes. In a separate bowl, combine 1½ cups of sugar, ¼ cups of flour, two eggs and squeezed lemon juice (from two lemons). Mix everything together, and pour it over the crust. Place the pan back in the oven for 20 minutes. Once cooled, cut them into individual bars, and arrange them on a plate. Add lemon wedges around the border or in the center of the plate for a decorative accent.
