What you'll need for Pumpkin Bread recipe:
  •  1 (15 ounce) can pumpkin puree
  •  4 eggs
  •  1 cup vegetable oil
  •  2/3 cup water
  •  3 cups white sugar
  •  3 1/2 cups all-purpose flour
  •  2 teaspoons baking soda
  •  1 1/2 teaspoons salt
  •  1 teaspoon ground cinnamon
  •  1 teaspoon ground nutmeg
  •  1/2 teaspoon ground cloves
  •  1/4 teaspoon ground ginger
  •  1 pkg Cream Cheese
Tomato Chutney:
  •  1/2 sweet onion, finely chopped
  •  1 garlic clove, minced
  •  1 tablespoon olive oil
  •  1 (14.5-oz.) can diced tomatoes
  •  3 tablespoons light brown sugar
  •  1 tablespoon finely grated fresh ginger
  •  1 tablespoon fresh lime juice
  •  2 teaspoons apple cider vinegar
  •  1/4 teaspoon salt
  •  1/4 teaspoon dried crushed red pepper
  •  1 mango, peeled and finely diced
  •  1 tablespoon finely chopped fresh cilantro
Directions for Pumpkin Bread:
Preheat oven to 350 degrees and grease three loaf pans. Mix the pumpkin puree, eggs, oil, sugar, and water until well mixed and smooth. Wisk the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger in a separate bowl, removing all clumps. Pour the dry ingredients into the wet mixture and stir until smooth. Pour into the pans and bake for 50 minutes or until an inserted toothpick comes out clean.

Directions for Tomato Chutney: 
 Cook the onion and garlic by sautéing on medium heat in the olive oil until the onion is tender. Then add the tomatoes, brown sugar, ginger, lime juice, vinegar, salt, and red pepper to the pan and cook for another ten minutes or until the mixture reduces and most of the liquid evaporates. Finally, stir in the mango and cook for 1 more minute. Let the mixture cool and stir in the fresh cilantro. Let cool in the refrigerator before serving.
