Fried Mac and Cheese
 
  • 1 tbsp. salt
  • 1 pound shaped pasta
  • 12 ounces canned evaporated milk
  • 1 cup chicken broth
  • 3 tbsp. butter
  • 1/3 cup flour
  • 1 1/2 tbsp. Dijon mustard
  • 1/2 cup grated Parmesan cheese
  • Pinch ground black pepper
  • 1 pound grated, sharp cheddar cheese
Boil two quarts of water in a large pot and add the salt and pasta. Follow the cooking instructions on the box. Once it's done, drain and set aside to cool. Heat the milk and chicken broth until it begins to boil. Use the empty pasta pot to melt the butter. Next, whisk in the flour and hot milk. Continue to whisk the mixture for four minutes. Add the mustard, Parmesan and pepper, and continue to whisk the mixture. Turn off heat, and stir in the cheddar until melted. Put the pasta in the sauce and stir everything over low heat. Once cool, put the pasta in a glass baking dish and place it in the refrigerator.

  • 1 cup flour
  • 1 tsp. cayenne pepper
  • 1/2 tsp. salt
  • 1 tsp. pepper
  • 1 beaten egg
  • 2 tbsp. of water
  • 1 cup breadcrumbs
  • Oil
Form the refrigerated macaroni and cheese into small balls. Mix cayenne, salt and pepper with the flour. Dip the macaroni and cheese pieces into the flour mixture and tap off extra. Dip the flour covered macaroni and cheese pieces in the egg wash. Cover the pieces with bread crumbs and put them aside for 5-10 minutes. Drop the mac and cheese pieces into the oil and fry them.
