Double Chip Macadamia Nut Cookie Recipe
In honor of National Cookie Day coming up on December 4, here is a popular recipe for double chip macadamia nut cookies. This recipe makes 4 and a half dozen so you should have plenty for a cookie exchange party or to give to the neighbors for the holidays. Put them in a nice tin with some chocolates and it makes a nice holiday gift for teachers, bus drivers, or anyone else.
What you'll need:
- 3/4 cups of sugar
- 3/4 cups of light brown sugar
- 1 cup of softened butter
- 2 large eggs
- 1 tsp of vanilla
- 2 1/4 cups of flour
- 1 tsp baking soda
- 1/2 tsp of salt
- 1 cup of chopped macadamia nuts (7 oz whole nuts)
- 2 cups of semi sweet chocolate chips (one 12 oz package)
- 1 cup of vanilla milk chips (6 oz white chocolate chips)
Preheat oven to 375 degrees. In a large mixing bowl combine sugar, brown sugar, butter, eggs, and vanilla. Beat at medium speed until well mixed (1-2 minutes). Add flour, baking soda, and salt. Continue beating and scraping the bowl until it's well mixed (another 1-2 minutes).
By hand, stir in nuts, chcolate chips, and vanilla chips. Drop cookies onto a greased cookie sheet 2 inches apart (cookies should be a teaspoonful each). Bake for 9-10 minutes or until lightly browned. Cool for a minute or so before removing from cookie sheet.
