Deliciously Decadent Mint Brownies
A yummy, decadent dessert, perfect for birthday parties, sports events or even for an after-dinner treat is mint brownies. Just chocolatey enough for the sweetest sweet tooth, this unique brownie recipe has a kick thanks to a layer of refreshing peppermint patties. Mint brownie recipe:
- 1 bag unsweetened chocolate chips
- 1/2 bag dark chocolate chips
- 8 ounces unsalted butter, at room temperature, cut into cubes
- 4 eggs, at room temperature
- 2 tsp. vanilla extract
- ¼ tsp. salt
- 4 cups granulated sugar
- 1 1/4 cup flour
- 2 bags of peppermint patties
Grease a 9 x 13 inch baking pan with butter or nonstick spray and preheat oven to 425 degrees. Place all the chocolate and butter in a bowl over a pan of simmering water so they warm together. When smooth and melted, remove from heat. Whip eggs, vanilla, salt, and sugar for ten minutes or so with an electric mixer until frothy. Stir in chocolate mixture and then flour. Pour half of the mixture into pan and layer with peppermint patties. Pour the remaining mixture on top and smooth. Bake for 35 minutes, rotating the pan halfway through cooking. Allow to cool completely and then cut into pieces to serve.
